At the beginning of COVID, my first-ever food art rebooted my creativity as I struggled to process all the suffering the pandemic would engender. Two years later, these beets marked another COVID moment for me: my move to Lambertville, New Jersey, where—unlike on Long Beach Island—it’s understood that we can help protect each other from the virus.
